I’ve got a nut allergy kid in my house, so we make pesto with no nuts!
I have made this so many times that I honestly don’t measure it anymore.
With the pesto I had made I have been experimenting with recipes. Last night I made a Chicken Pesto personal pizza. I used the pesto as the sauce on the dough, and then placed some chunks of pre-cooked chicken, onion, spinach, garlic, small pieces of tomato, shredded mozzarella, and small scattered pieces of goat cheese. These turned out great, and was yummy!!
In our garden this year, we ended up with a lot of Basil! I didn’t want it to go to waste and couldn’t keep up with it with Italian dishes etc. So I made our own Basil Pesto! It was super easy to make!
