Cheesy Chicken and Rice Casserole

 

One of my go-to make ahead dinners for the week is this easy and quick cheesy chicken and rice casserole.  Not only is it good but you can easily mix it up with different things added to it. (The part that I like the best about it is the yellow mustard it gives it a unique taste.)

 

Ingredients:

1 1/2 cups Rice

1 1/2 cups Water

about 5-6 Chicken Tenderloins

1 can of Cream of Chicken

1/2 can of milk

Yellow Mustard to taste ( I usually add about 2 big circles in the skillet)

Black Pepper to taste

1/2 bag Cheddar Cheese

1/2 bag of Frozen Broccoli Florets

1/2 red onion chopped

 

1.) In a Rice cooker- cook the rice with water and keep off to the side for later.

2.) In a large skillet brown the chicken, can either brown as full tenderloins and cut it later, or cut/cube it ahead of time and then brown them.

3.) Add the onion and broccoli florets to skillet let cook a little

4.) Add Cream of Chicken and 1/2 the can of milk

5.) Add Yellow Mustard and Cheddar Cheese and Pepper.

6.)  Stir until all mixed

7.) Add the Rice stir well.

Serve right away or put in casserole dish to heat up later!
