A great side dish for any BBQ or Picnic or Thanksgiving is “Jiffy corn bread”. But to make it more interesting you can add some canned corn, and cheese and sour cream! This recipe is one of our favorites!
1/2 cup Butter (Melted)
1 Box of “Jiffy Corn Muffin” Mix
1 Can of Creamed Corn
1 Can of Regular Corn (not drained)
2 Cups of Cheddar Cheese
1/2 Cup of Sour Cream
-Preheat oven to 350 degrees F.
-Spray a large casserole dish with cooking spray
-Add right into the casserole dish, the melted butter, “Jiffy Mix”, both cans of corn, the egg, and 1 cup of the cheddar cheese.
-Mix the ingredients until it is all combined.
-Spoon the sour cream in rows to evenly spread it across the top in dollops. Use a knife to swirl it around the top.
-Sprinkle 1 cup of remaining cheddar cheese on top.
Bake for about 40-50 min until the edges are golden brown and the middle is cooked through.
