Jiffy Cornbread Casserole

A great side dish for any BBQ or Picnic or Thanksgiving is “Jiffy corn bread”. ┬áBut to make it more interesting you can add some canned corn, and cheese and sour cream! ┬áThis recipe is one of our favorites!

 

1/2 cup Butter (Melted)

1 Box of “Jiffy Corn Muffin” Mix

1 Can of Creamed Corn

1 Can of Regular Corn (not drained)

1 Egg

2 Cups of Cheddar Cheese

1/2 Cup of Sour Cream

 

-Preheat oven to 350 degrees F.

-Spray a large casserole dish with cooking spray

-Add right into the casserole dish, the melted butter, “Jiffy Mix”, both cans of corn, the egg, and 1 cup of the cheddar cheese.

-Mix the ingredients until it is all combined.

-Spoon the sour cream in rows to evenly spread it across the top in dollops. Use a knife to swirl it around the top.

-Sprinkle 1 cup of remaining cheddar cheese on top.

Bake for about 40-50 min until the edges are golden brown and the middle is cooked through.
