In our garden this year, we ended up with a lot of Basil! I didn’t want it to go to waste and couldn’t keep up with it with Italian dishes etc. So I made our own Basil Pesto! It was super easy to make!
I got out my food processor, and added:
2 cups of Basil
1/3 cup of Parmesan Romano Grated cheese
1/3 cup of Olive Oil
1/3 cup of Walnuts ( most recipes call for Pine nuts but all we had were walnuts and it turned out fine!)
1/2 teaspoon of Lemon Juice
Puree until it gets to the right consistency.
Store in a sealed dish in the refrigerator.
