I wanted to make a different kind of chili with chicken so I kind of just threw some things together and it came out pretty good. It reheats well for a make ahead dinner for the week.
Ingredients:
4-6 chicken tenders cooked and shredded
Chicken chili seasoning packet
1 Can of kidney beans
1 Can of Corn
1 Can of Diced Tomatoes with Green Chilis
1 Brick of Cream Cheese
Onion (Chopped)- to taste
Salt and Pepper to taste
Cook the chicken tenders on a skillet and let cool slightly then shred
Melt the Cream Cheese in pot, and add all the ingredients and let simmer for a while and its heated all the way through.
